I love smoked salmon.  It’s tasty, works well for low fat and low carb diets, and it’s so versatile in salads, on Eggs Benedict for brunch, thrown in some scrambled eggs, or in any of a myriad of appetizer applications.  One of  my absolute favorite appetizers is also one of the easiest.  Another benefit of this smoked salmon spread is that I can keep it low carb for myself by using veggie dippers and appease the non veggie lovers with assorted crackers.

Ever since I made (and devoured) salted caramel tarts made with shortbread cookie cups, I’ve been brainstorming on other fun ways to make little pie-like treats that are both cute and delicious. The enduring popularity of apple crumble pie is the inspiration for this recipe, which features an oatmeal cookie crust. You can use whatever apples you prefer for the filling; I like Cortland and Royal Gala; many people are fond of Granny Smiths for pies. Note that both the filling and the cookie cups + crumble can be made in advance and refrigerated for up to a week or frozen for longer storage.

This Tex Mex chicken with veggies and spicy slaw was a weeknight dinner that came together quickly after work because I split cooking duties with my husband. He manned the grill while I did the veggies and whipped up the slaw. I also made some ingredients play double duty by using them in multiple applications. The jalapeno simple syrup was a fantastic find at a local food event, but it’s easy to make your own. I find it works wonders in dressing and marinades. I added some of my favorite cotija cheese as a garnish, along with a dollop of my quick and easy guacamole. Feel free to finish yours with the same or other tried-and-true Tex Mex favorites like salsas, sour cream, or an extra sprinkle of fresh cilantro.

I love meatballs in any form, and my family especially loves these beef-and-pork meatballs in tomato wine sauce with fresh ricotta. For me, the tomato sauce and fresh ricotta cheese are a perfect marriage. Ten years ago I found out just how easy ricotta is to make and I’ve not looked back since. I’ll never purchase store-bought again. I keep on a low carb diet for the most part, and I love meals like this where I can make the main components the same and sub out a low carb option for the starch. This type of dinner is pure love and comfort food.

Make these for your Valentine  The truth about your heart

These strawberries are easy to make and impressive-looking. They make nice gifts or additions to a table of sweets.

To make these, you will need a chocolate melting pot and paint brushes along with your ingredients.* The most important thing to remember when working with chocolate is to make sure everything is dry. If a spoon is wet, the chocolate will curdle and you will not be able to use it or this purpose (although adding a great amount of water will make it a nice chocolate drip for  cake).

When your strawberries are dipped and decorated, to transport them put a dab of melted chocolate on the tray where you will be placing the strawberry. Set the strawberry on top, let it dry on the tray, and this will stabilize it.

When I was a teenager my mother took me with her to a class on working with chocolate. I really enjoyed it and started baking and making chocolate pieces because of her. She is gone now and making these reminds me of her.
