Sheermal (also spelled shirmal), is a traditional saffron-flavored flatbread from Iran. It was  introduced to North India by Mughal Emperors. It is not commonly made in homes but can be found in Mughal restaurants.  It can be served with rich mutton stews and curries, or it can be had with tea or coffee like any other bread. It has subtle flavors of milk , saffron, keora, and rose water.

I serve sheermal as an accompaniment to mutton on the occasion of Eid. Sheermal are very flavorful and little sweet. If you don’t like sweetness you can reduce the amount of confectioners’ sugar in the recipe.

Pineapple jam is drier than berry jams but it is delicious! Pineapple does not lend  itself to making jam as there is an enzyme in it that does not work with pectin. This jam is full of pineapple pulp and has loads of pineapple taste, unlike some ‘pineapple jam’ that actually is a jelly. This recipe is also versatile as it can be made more spreadable by reducing the simmering time. In the olden days, pineapple cooked this way (with more liquid) was used as an ice cream topping.

This jam is ideal for making pineapple jam tart, a favorite tart in Malaysia. These pineapple jam tarts are popular during Chinese New Year and Eid-al Fitr.

Bake Mrs. Beeton’s fruitcake by the 15th of December, no later, (if you are making for Christmas.)

The time has come to reinvigorate this fruit and nut compendium. Don’t lose a minute, and soak your dried fruits in the best dark rum you can find. If you want to add nuts, go right ahead.

Cool it, soak it, wrap it well, store it a cool place. Douse it again, and once more before serving it on Christmas day to the delight of one and all.

Celebrate Diwali with delectable Paneer Jalebis

Diwali, The Festival of Lights, is the perfect time to enjoy traditional Indian sweets.

Jalebis are a traditional and very popular Indian sweet. They are available in almost all sweet shops and served at marriages, celebrations, and get-togethers. Jalebis are served alone, or with rabdi.  Rabdi is another traditional Indian sweet made by boiling milk for a long time and adding dried fruit. Paneer Jalebis are distinctive in that they are made with paneer cheese with only a little all-purpose flour.

Don’t know where to buy paneer? It’s easy to make your own, and ricotta makes a good substitute.

Benedicta was born in Rivers State, Nigeria. Her mom passed on her passion for cooking to her. Currently they enjoy running their own eatery together called Geeb’s Kitchen. (GEEB is an acronym of the first letters of her name, her two siblings’ and mother’s name.)
