Make these for your Valentine  The truth about your heart

These strawberries are easy to make and impressive-looking. They make nice gifts or additions to a table of sweets.

To make these, you will need a chocolate melting pot and paint brushes along with your ingredients.* The most important thing to remember when working with chocolate is to make sure everything is dry. If a spoon is wet, the chocolate will curdle and you will not be able to use it or this purpose (although adding a great amount of water will make it a nice chocolate drip for  cake).

When your strawberries are dipped and decorated, to transport them put a dab of melted chocolate on the tray where you will be placing the strawberry. Set the strawberry on top, let it dry on the tray, and this will stabilize it.

When I was a teenager my mother took me with her to a class on working with chocolate. I really enjoyed it and started baking and making chocolate pieces because of her. She is gone now and making these reminds me of her.

My grandmother, Agata ‘Agnes’ Minnillo, made homemade cavatelli for Christmas my entire life. The wooden board she rolled them on was hand-made by my grandfather, Crescenzo ‘Christy’ Minnillo, with a side to hold the board in place and attach the specialized machine for shaping them. Her metal machine was hand-crafted over 100 years ago, passed down to her from my great-grandmother. Grandma brought it everywhere, visiting grandchildren in and out of Cleveland, Ohio, where she and grandpa lived most of their married life. When she was 96 years old, the old machine stopped cutting the shapes properly, and she had to buy a conventional machine. My grandmother and I tried very hard to find someone to repair the original, but the metal was worn out. Now it is in my home as a piece of sculpture! Grandma’s cavatelli was always served in the same white bowl, also passed down from my great grandmother, when family gathered for Christmas and Easter. They were married for 64 years, and raised two children. Agnes died at age 99, still living in the home where she had entertained eight grandchildren and 18 great grandchildren and many friends.

Pancit Molo is a Filipino pork dumpling (wonton) chicken soup originating in the Western Visayas region of the Philippines. The recipe is influenced by the large community of Chinese people living in the town of Molo in the province of Iloilo.

The “dumplings” (molo) in this soup are wontons filled with seasoned pork and egg. I like the dish because it’s Filipino-Chinese rolled into one, like my origin. I was born and raised in the Philippines with a pure Chinese father and a half Filipino, half Chinese mother.

I eat this soup summer or winter with bread. My tip is to sprinkle white pepper while it’s hot before eating to add more flavor and spiciness.

This is the way I learned to make sauerkraut over a decade ago. The person who taught me made sauerkraut in jars, rather than a crock, to keep their small apartment from smelling like cabbage, and I find this method to be so easy (and to work so well in small spaces) that it’s become a go-to for me when I teach fermentation classes. You’ll need two pint jars with lids and bands for this method.

Sheermal (also spelled shirmal), is a traditional saffron-flavored flatbread from Iran. It was  introduced to North India by Mughal Emperors. It is not commonly made in homes but can be found in Mughal restaurants.  It can be served with rich mutton stews and curries, or it can be had with tea or coffee like any other bread. It has subtle flavors of milk , saffron, keora, and rose water.

I serve sheermal as an accompaniment to mutton on the occasion of Eid. Sheermal are very flavorful and little sweet. If you don’t like sweetness you can reduce the amount of confectioners’ sugar in the recipe.

Pineapple jam is drier than berry jams but it is delicious! Pineapple does not lend  itself to making jam as there is an enzyme in it that does not work with pectin. This jam is full of pineapple pulp and has loads of pineapple taste, unlike some ‘pineapple jam’ that actually is a jelly. This recipe is also versatile as it can be made more spreadable by reducing the simmering time. In the olden days, pineapple cooked this way (with more liquid) was used as an ice cream topping.

This jam is ideal for making pineapple jam tart, a favorite tart in Malaysia. These pineapple jam tarts are popular during Chinese New Year and Eid-al Fitr.
