This orange olive oil cake recipe is one that my mother taught me years ago growing up. It is more of a pudding cake than an actual flaky cake. You can serve the cake warm with a dollop of whipped cream and fresh berries, or at room temperature and dust it with powdered sugar and arrange with oranges and sprinkle with mint. This cake brings back great memories in the kitchen with my mother. Orange olive oil cake will last for a week covered, however, I have never had it last more than an evening.

Ever since I made (and devoured) salted caramel tarts made with shortbread cookie cups, I’ve been brainstorming on other fun ways to make little pie-like treats that are both cute and delicious. The enduring popularity of apple crumble pie is the inspiration for this recipe, which features an oatmeal cookie crust. You can use whatever apples you prefer for the filling; I like Cortland and Royal Gala; many people are fond of Granny Smiths for pies. Note that both the filling and the cookie cups + crumble can be made in advance and refrigerated for up to a week or frozen for longer storage.

Hamantaschen are a traditional Jewish pastry typically eaten during the festival of Purim, celebrated annually on the 14th day of the Hebrew month of Adar. In 2023 it begins at sundown on Monday March 6, and ends on Tuesday, March 7. It is a festive holiday that includes the reading of the biblical book of Esther, a Jewish woman who became the queen of Persia. Purim is a holiday of joy, celebration, and community. Children are encouraged to participate in these festivities in a variety of ways, such as dressing up in costumes and exchanging baskets of treats with friends and family.

The triangular-shaped cookie is usually made with fruit jam or poppy seed filling, but Hamantaschen filled with chocolate chips are a favorite with children (who make great helpers) in the kitchen. The name “hamantaschen” means “Haman’s pockets”, and  they are named after the villain in the Purim story, Haman, who was said to have worn a three-cornered hat. The pastries are traditionally eaten during the festival to celebrate the defeat of Haman and the salvation of the Jewish people.

Make these for your Valentine  The truth about your heart

These strawberries are easy to make and impressive-looking. They make nice gifts or additions to a table of sweets.

To make these, you will need a chocolate melting pot and paint brushes along with your ingredients.* The most important thing to remember when working with chocolate is to make sure everything is dry. If a spoon is wet, the chocolate will curdle and you will not be able to use it or this purpose (although adding a great amount of water will make it a nice chocolate drip for  cake).

When your strawberries are dipped and decorated, to transport them put a dab of melted chocolate on the tray where you will be placing the strawberry. Set the strawberry on top, let it dry on the tray, and this will stabilize it.

When I was a teenager my mother took me with her to a class on working with chocolate. I really enjoyed it and started baking and making chocolate pieces because of her. She is gone now and making these reminds me of her.

Tiramisu is a classic Italian no-bake dessert made with layers of coffee-soaked ladyfingers and incredible mascarpone cream. This easy recipe is truly the best homemade tiramisu. The custard-like cream is excellent and contains no raw egg. Tiramisu may be prepared in a 23 by 33 cm (9 by 13 inch) casserole dish, but is especially pretty when served in a footed glass bowl lined with cocoa-dusted ladyfingers.

Sheermal (also spelled shirmal), is a traditional saffron-flavored flatbread from Iran. It was  introduced to North India by Mughal Emperors. It is not commonly made in homes but can be found in Mughal restaurants.  It can be served with rich mutton stews and curries, or it can be had with tea or coffee like any other bread. It has subtle flavors of milk , saffron, keora, and rose water.

I serve sheermal as an accompaniment to mutton on the occasion of Eid. Sheermal are very flavorful and little sweet. If you don’t like sweetness you can reduce the amount of confectioners’ sugar in the recipe.

Eggplant Parmesan “alla Milanese.” I’ve always liked to try new dishes. When I had many eggplants (aubergines) in my garden I came across across this Jamie Oliver aubergine recipe on a television program.  So I decided to adapt it to my own taste. The recipe evolved into what it is now, and can change with turning of the seasons. Substitute chicken, veal, or zucchini for the eggplant for variety.
