I’m married to a Romanian and have found that vegetable bouillon comes in handy for soups, ciorba, borscht and broths, even stews. I call it a hearty soup packed into a block. Vegetable bouillon is easy, comforting, and filling with home baked bread, and these concentrated blocks take less space in the freezer than fully prepared soups.

CIORBA: Romanian Meatball Soup

You can use any vegetables except potatoes, which don’t freeze well. I have made suggestions for the proportions of the vegetables, but what you choose is entirely up to you. Parsnips are sweet, and leeks and kohlrabi will add rich flavor. If you can’t get fresh turmeric it’s okay – the carrots will provide a warm yellow color – but do NOT use turmeric powder. Your soups will then taste like curry. Trust me on this, unless you don’t care.

I make lots of Romanian ciorba, hence the usage of lovage and dill in my vegetable bouillon.

For a fast soup on cold evenings, all you need to do is pop one or two vegetable bouillon squares into the pot with water or stock, and add meatballs, dumplings or potatoes. If you feel like it, you can add extra vegetables. But when the temperature is minus 20 degrees Celsius (minus 4°F) I don’t want to muck around in the kitchen, I want something easy, hearty and comforting.

I started making this roasted tomato sauce years ago when my gardening skills had improved and I was having an abundance of tomatoes every year. I would always freeze tomatoes roasted with garlic, to be able to savor that summer flavor in winter, but struggled with making sauce. The course I had taken in canning had me seriously concerned about the level of acidity of the varieties of tomatoes I was growing and the safety of my end product and I despised all the work of skinning and seeding the tomatoes. I decided if I could freeze my roasted tomatoes, I could easily freeze a similarly produced sauce. This simple roasted tomato sauce quickly became a family favorite.

A deviled egg with crab is but one of a nearly endless list of devilish permutations.

Start with the basic yolks mashed with a little Dijon mustard and bought mayonnaise, and then pick a main additive. Think minced shrimp, tuna, gorgonzola cheese, mashed avocado and minced jalapeño, deviled ham (double deviled), minced crispy bacon, smoked salmon, pimento cheese.

Then coordinate spices, herbs and garnishes accordingly.

Perhaps a section of fresh fig and a piece of walnut with the gorgonzola.
Or crushed blue taco chips on the avocado. A tiny triangle of Swiss cheese and a strip of gherkin with the ham. A tiny slice of a tiny tomato and a shard of romaine lettuce with the bacon (for a BLT deviled egg). Salmon roe on the smoked salmon, or a diamond of pimento on the pimento cheese. Minced parsley or cilantro, snipped chives, shredded basil, sweet, hot or smoked paprika, a sprinkle of “Everything But the Bagel®,” Jane’s Crazy® salt — you get the idea, run with it.

The deviled part may go back to Ancient Rome, but in the late 18 th and early 19 th century.  “Deviled” food items usually implied that they were made with spicy (as in hot) ingredients. If they were ‘hot as hell’ well then the devil must be involved. The association with the devil was firmly embedded in the mind of the consumer when Underwood trademarked the little pitchfork wielding, pointy-tailed devil for their Underwood Deviled Ham® in 1870.

This everyday pepper sauce is quite hot if eaten alone, but is meant to be used as a side sauce or as an ingredient in your recipes.  I make it as a way to preserve my crop and to make it easy to experiment with.

Be sure to wear gloves for handling the hot peppers.  If you handle hot peppers often,  you will be okay with the heat on your hands but if you inadvertently touch other, more sensitive body parts, you may be in for an uncomfortable ride.  I have experienced habañero eyes more than once and it lasts for hours. You will not need to remove the skin or seeds from the tomatoes. It is much work and they will be strained out after cooking.

I enjoyed a smoked salmon cheese dip like this so much in Anchorage, Alaska that I decided I needed to make it at home… with a few improvements! This is good with crackers, or spread on a slice of sourdough toast and top with a few thin slices of fresh jalapeno pepper.

Fresh homemade white butter has its own charm! It is called makhan in Hindi and is made without any additives or preservatives.  Making butter at home sounds difficult, but thanks to electronic mixers or food processors, you can whip it up in just 5 minutes! Many North Indian families make butter at home because it tastes better than the butter you can buy at the store. As compared to the regular butter, Homemade white butter is natural, unprocessed, more nutritious, and can be enjoyed with literally anything. My Mom used to make butter in order to make homemade ghee or clarified butter. You can also keep the butter whole for everyday cooking. It keeps well in the refrigerator for 5-7 days  and in the freezer for a month or even more! It is delicious served on piping hot parathas or fried stuffed flatbreads of all sorts, like aloo/potato paratha, gobi/cauliflower paratha, mooli/ radish parathas, or paneer/Indian cottage cheese paratha.  It is also used liberally when serving the famous combination of makki di roti (corn meal flatbread) with sarson ka saag (mustard greens).

To make this recipe, collect fresh cream or malai daily at home from the top of slow-boiled milk and store this collected cream in freezer. You can use readymade heavy cream too.
