Pancit Molo is a Filipino pork dumpling (wonton) chicken soup originating in the Western Visayas region of the Philippines. The recipe is influenced by the large community of Chinese people living in the town of Molo in the province of Iloilo.

The “dumplings” (molo) in this soup are wontons filled with seasoned pork and egg. I like the dish because it’s Filipino-Chinese rolled into one, like my origin. I was born and raised in the Philippines with a pure Chinese father and a half Filipino, half Chinese mother.

I eat this soup summer or winter with bread. My tip is to sprinkle white pepper while it’s hot before eating to add more flavor and spiciness.

This Cajun sausage stew could hardly be easier to prepare. Once the meats and onion are browned, the remaining ingredients are added to the pot and simmer for an hour or two, filling the kitchen with the heady aroma of bubbling stew. The recipe calls for Cajun seasoning, a spice blend with paprika, celery seed, garlic, basil, cayenne, white pepper, thyme and parsley.

Serve Cajun sausage stew with toasted crusty bread topped with butter and a dash or two of kosher salt.

I like seafood chowder a lot, especially when it is cooked with homemade fish stock. I came across this recipe from my friend Steve Geving and decided to give it a try. Summertime calls for easy recipes with great flavors. This particular black bean soup recipe was inspired by a look around the kitchen to see what I had to make for lunch. My recipes come from variations of others I’ve tried and my own imagination. The chipotle, cumin and chili powder were a nod to a Mexican recipe, but the fresh ginger was added to give a fresh bite and complementary spice. The feta was a substitute for Cotija. It was simple and delish.

This recipe will stand up to experimentation. If you keep it simple and use fresh simple ingredients, you really can’t go too far wrong

This five ingredient soup is simple, fairly quick, and oh-so-good. It calls for a good amount of butter and cream. Use it. It is worth it, even if it means having a smaller serving size. I usually serve this soup for dinner with a small panini or hearty salad on the side, but it also works amazingly well as a holiday appetizer. Simply place the prepared soup in a slow cooker on warm or low, set a ladle and some small bowls or mugs nearby, and guests can serve themselves as you’re putting the finishing touches on the main course.
