Sushi and sashimi, popular Japanese dishes, have distinctly different ingredients and preparation.

Sushi  typically consists of bite-sized pieces of vinegared rice, called “sushi rice,” combined with various ingredients.  While raw fish is a common ingredient in sushi, not all sushi is raw. Cooked fish, vegetables, and even fruits can also be used in sushi, and some sushi rolls are even deep-fried or baked. Sushi can be served in many different forms, such as nigiri (a piece of sushi rice topped with a slice of raw fish*), maki (sushi rolls wrapped in seaweed), and temaki (hand-rolled sushi cones).

Sheets of dried seaweed, called nori, are often used to wrap sushi rolls. Soy sauce, wasabi (a spicy green paste), and pickled ginger are often served alongside sushi as condiments.

Some common sushi ingredients in addition to the sushi rice, are

  • Raw fish such as  salmon, tuna, yellowtail, and eel.
  • Vegetables such as cucumber, avocado, asparagus, carrot, and mushroom.
  • Cooked shrimp, crab, and octopus.
  • Cooked, seasoned egg omelet, called tamagoyaki.

Sashimi consists of thin slices of raw fish, served without any rice or other ingredients. The fish used in sashimi is typically very fresh and of high quality, and it is often sliced into delicate, translucent pieces that are arranged on a plate.

While sushi and sashimi may both feature raw fish, they are prepared and served differently. Sushi typically involves a combination of vinegared rice and fish, while sashimi is simply sliced raw fish served without any rice or other ingredients.

*Nigiri is raw seafood served over rice. Like sushi,  it contains rice.  Like sashimi, it contains raw seafood.
However nigiri does not contain extra ingredients or seaweed as does sushi, and it contains vinegar rice, while sashimi does not.

The exact temperature used can depend on the type of food being roasted and the desired outcome (e.g. crispy skin on a chicken or a tender roast beef). For example, root vegetables may be roasted at a lower temperature for a longer period of time, while meats may be roasted at a higher temperature for a shorter period of time to achieve a browned exterior and a juicy interior.

Common foods that are roasted include:

  • Meat (beef, pork, lamb, chicken)
  • Vegetables (potatoes, carrots, parsnips, bell peppers)
  • Nuts (almonds, pecans, hazelnuts)
  • Seafood (salmon, shrimp, scallops)
  • Whole chickens or turkeys
  • Game meats (venison, quail)

I like seafood chowder a lot, especially when it is cooked with homemade fish stock. I came across this recipe from my friend Steve Geving and decided to give it a try. Smoked salmon salad and avocado toast make for a fantastic weekend brunch, especially if you’re watching carbs.   I love fresh spinach, especially in the spring.  Its vibrant green makes me excited as I anticipate the fresh veggies that will soon be available again at my local farmers’ market.  For this smoked salmon salad and avocado toast, I used the veggies I had on hand, but feel free to swap out for others if there is something you don’t like.

Make the two dressings ahead of time. The great thing about these is the recipes leave extra for later meals. For example, I made a creamy shrimp salad with poached shrimp and the Goddess dressing.  My youngest kiddo likes to dip veggies in it and also uses it for a sandwich spread.

The pickled daikon, which is optional for the salad, needs to be made a day or two in advance. I fell in love with this daikon when my son brought home some Korean fried chicken, which had pickled daikon on the side.  I get my daikon from a nearby large Asian market. As with the dressings, I always make extra so I have some on hand for later meals during the week.

The recipe for smoked salmon salad and avocado toast serves two, but is easily multiplied.

A deviled egg with crab is but one of a nearly endless list of devilish permutations.

Start with the basic yolks mashed with a little Dijon mustard and bought mayonnaise, and then pick a main additive. Think minced shrimp, tuna, gorgonzola cheese, mashed avocado and minced jalapeño, deviled ham (double deviled), minced crispy bacon, smoked salmon, pimento cheese.

Then coordinate spices, herbs and garnishes accordingly.

Perhaps a section of fresh fig and a piece of walnut with the gorgonzola.
Or crushed blue taco chips on the avocado. A tiny triangle of Swiss cheese and a strip of gherkin with the ham. A tiny slice of a tiny tomato and a shard of romaine lettuce with the bacon (for a BLT deviled egg). Salmon roe on the smoked salmon, or a diamond of pimento on the pimento cheese. Minced parsley or cilantro, snipped chives, shredded basil, sweet, hot or smoked paprika, a sprinkle of “Everything But the Bagel®,” Jane’s Crazy® salt — you get the idea, run with it.

The deviled part may go back to Ancient Rome, but in the late 18 th and early 19 th century.  “Deviled” food items usually implied that they were made with spicy (as in hot) ingredients. If they were ‘hot as hell’ well then the devil must be involved. The association with the devil was firmly embedded in the mind of the consumer when Underwood trademarked the little pitchfork wielding, pointy-tailed devil for their Underwood Deviled Ham® in 1870.

Simmered Chicken and Vegetables

A meal for the new year is Nishime. Japanese simmered chicken and vegetables is a popular dish. It is an osechi. This means seasonal food, served especially during the New Year’s season in Japan. Traditionally, shops or supermarkets are closed during new year holidays. Therefore mothers cook dishes to last about a week. Osechi includes different kinds of dishes. These are collectively called osechi dishes.

Each osechi has a meaning, The ingredients in this meal for the new year include simmered shrimp for long life, as well as simmered black beans that mean work well. And so on.

Nishime is a dish of  simmered chicken and vegetables. Nishime is a standard meal for the new year. It is for when we meet on the New Year’s Day. Nishime also has a meaning. It means strong relationship among family members. It has many decorations, so it looks gorgeous.
