Tiramisu is a classic Italian no-bake dessert made with layers of coffee-soaked ladyfingers and incredible mascarpone cream. This easy recipe is truly the best homemade tiramisu. The custard-like cream is excellent and contains no raw egg. Tiramisu may be prepared in a 23 by 33 cm (9 by 13 inch) casserole dish, but is especially pretty when served in a footed glass bowl lined with cocoa-dusted ladyfingers.

Pineapple jam is drier than berry jams but it is delicious! Pineapple does not lend  itself to making jam as there is an enzyme in it that does not work with pectin. This jam is full of pineapple pulp and has loads of pineapple taste, unlike some ‘pineapple jam’ that actually is a jelly. This recipe is also versatile as it can be made more spreadable by reducing the simmering time. In the olden days, pineapple cooked this way (with more liquid) was used as an ice cream topping.

This jam is ideal for making pineapple jam tart, a favorite tart in Malaysia. These pineapple jam tarts are popular during Chinese New Year and Eid-al Fitr.

Bake Mrs. Beeton’s fruitcake by the 15th of December, no later, (if you are making for Christmas.)

The time has come to reinvigorate this fruit and nut compendium. Don’t lose a minute, and soak your dried fruits in the best dark rum you can find. If you want to add nuts, go right ahead.

Cool it, soak it, wrap it well, store it a cool place. Douse it again, and once more before serving it on Christmas day to the delight of one and all.

Opera Cake is a rich French dessert.

Opera Cake is filled with French coffee buttercream, and chocolate ganache, stacked between almond and meringue sponge cake (known as joconde). Finally, the Opera Cake is coated in chocolate glaze.

I was looking for more coffee-flavored desserts after discovering Tiramisu. This is a much-loved Italian dessert with a coffee flavor. After tasting Opera Cake, I realized how well coffee and chocolate go together. It is a match made in heaven. Like Tiramisu, this beautiful cake has layers…cream filling layers and more…

Refrigerate the cake for 2 hours or overnight before glazing. You can chill it for up to 1 day, so it’s a great make-ahead dessert recipe!

I spotted Japanese Sweet potatoes recently in a grocery store. Japanese sweet potatoes are called “satsuma-imo“. I had heard of them, but had never seen them.. They are a deep red/purple color on the outside and white on the inside. These were larger than what I expected. I decided to try some, not sure what I was going to do with them. After I boiled them I almost didn’t want to make the pie, they were so tasty.

Japanese vs. American Sweet Potatoes

Japanese sweet potatoes are sweeter than varieties found in the U.S. and have a rich, nutty flavor. I tried one with a little butter and sugar sprinkled on top and it was delicious. I decided to try them in the recipe I use for Sweet Potato Pie that I usually make around the holidays. The potatoes have a white flesh that turns yellowish when cooked, and they they do turn dark if left standing,

Adding  just a few drops of food coloring can make the pie appealing.
The Japanese Sweet Potato Pie doesn’t need a crust if you don’t want one. I make it both ways. I like it without a crust and my husband likes it with a crust. My family loves it either way.

This Peanut Butter Fudge recipe was my mother’s family favorite. She made this often, usually per request. It is a simple old-fashioned peanut butter fudge recipe that if cooked to proper soft ball stage is fabulous. Made with a few simple ingredients, this is deliciously addictive. It also makes a great hostess or holiday gift. Wrap in wax paper and tie with a pretty bow. Peanut butter lovers will be overjoyed. The Himalayan Pink salt is the finishing touch.
